Oatmeal Cranberry White Chocolate Chunk Cookies

Serves: 2-1/2 dozen Cookies

Ingredients:

  • 2/3 cup of butter or margarine, softened
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1-1/2 cups old-fashioned oats
  • 1-1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 6-ounce package Craisins® Sweetened Dried Cranberries
  • 1 12-once bag of white chocolate chunks or chips
  • 1 6-once bag of walnuts(coarsely chopped)

Instructions:

Preheat oven to 375°F. Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate bowl. Add to butter mixture in several additions. mixing well after each addition. Stir in sweetened dried cranberries, white chocolate chunks and walnuts. Drop by rounded teaspoons onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Aunt Gina’s Lasagna

Serves: 6

Ingredients:

  • 1 pound of Lasagna (oven ready)
  • 3 pounds of Ricotta
  • 1 pound of Mozzarella (cut in cubes)
  • 3 eggs
  • sauce
  • grated cheese
  • fresh parsley

Instructions:

In large bowl mix ricotta, mozzerella, eggs, parsley and grated cheese by hand.

In Lasagna Baking disk or tin put a layer of sauce, then a layer of lasagna.  Top noodles with cheese mixture and a layer of sauce, then place another layer of Lasagna and repeat.  Be sure top layer ends with Lasagna noodles covered with sauce.  Add additional grated cheese to each layer.  (The key is a lot of cheese)

Aunt Lori’s Spanish Rice

Serves: 4

Ingredients:

  • 1 pound hamburger
  • 1 green pepper (chopped)
  • 1 large onion (chopped)
  • 1/2 clove garlic (chopped)
  • 1 18oz can tomatoes
  • 1 8oz can Hunt’s tomato sauce
  • 1 tablespoon paparika
  • 1 cup long grain rice
  • breadcrumbs
  • salt
  • Pepper
  • Parsley

Instructions:

Brown hamburger.  Add onion, pepper, and garlic and cook until tender.  Add the can of tomatoes plus one can of water, the tomato sauce, paparika.  Pepper and parsley to taste.  Cook 20 minutes.

Add 1 cup rice and cook until tender.  Add water as needed.  Salt to taste.  Put in buttered casserole and top with breadcrumbs.  Cook until top is golden brown at 350° – 400°.

Stuffed Peppers

Ingredients:

  • 5 peppers
  • 1 lb chop meat
  • 1 cup Carolina rice
  • garlic
  • 1 can tomato puree
  • salt
  • black pepper

Instructions:

Clean and empty middle of peppers.  Mix chop meat, rice, salt and black pepper.  Stuff peppers and rub with oil.  Roast in oven at 350°.  Take out a little oil from peppers to make gravy.  In sauce pot add more oil if needed.  Brown garlic, salt and black pepper.  Add tomatoes and cook 1/2 hour.  Then add peppers in gravy and let it simmer for 1/2 hour.

Pumpkin Cake

Holiday Season is Not Required.

Combine
1/2 cup (1 stick) of soft/melted butter
1 1/2 cups of sugar
3 eggs
2 teaspoons vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger

Beat Well

Add
1 – 5 oz can of evaporated milk
1 – 15 oz can of pumpkin
2 cups flour

Mix Well

Bake at 350 for 60-70 minutes in a tube pan on a tray with a bit of water.
