Pistachio Muffins

Preheat Oven to 350 degrees

1 Yellow Cake Mix
1/3 cup pistachio nuts – Unchopped
1/3 cup pistachio nuts – Finely Chopped
1/3 cup applesauce
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 tsp green food coloring

Boil the unchopped pistachio nuts for 20 minutes.

Prepare Yellow Cake Mix as per directions on the box EXCEPT use 1/3 cup Less Water.
(The water will be replaced by the Applesauce.)

Add the remaining ingredients except leave out a few spoonfuls of the Finely Chopped pistachio nuts to use as topping.

Stir lightly just to mix. Don’t over mix or texture will suffer.

Spoon into about nine paper-lined muffin cups.

Spoon topping on tops.

Bake at 350 degrees F for 22-25 minutes or until golden brown.

Cool 5 minutes, then remove from pan and cool on wire rack.

Crab Cakes

Ingredients
1 1/8 cups crushed saltine crackers
1 cup mayonnaise
1 teaspoon prepared brown mustard
1/4 cup chopped onion
1 stalk celery, chopped with leaves
1 teaspoon Old Bay Seasoning
1 pound crabmeat

Directions
Preheat oven on broiler setting. Lightly grease a baking sheet.
In a medium bowl, mix together crushed saltine crackers, mayonnaise, brown mustard, onion, celery, and Old Bay seasoning. Gently stir in the crabmeat. Shape into 6 patties. Place on prepared baking sheet.

Broil crab cakes 8 to 10 minutes on each side, or until golden brown.

Robert’s Rockin’ Ribs

Dry Rub

Mix
1 cup Brown Sugar
1/4 cup Chili Powder
1/4 cup Paprika
  1 Tbs Minced Onion
  1 Tbs Ground Mustard
  1 Tbs Garlic Powder
  1 Tbs Minced Garlic
  1 Tbs Coriander
  1 Tbs Red Jalapeno Pepper
  1 Tbs Red & Black Pepper
  1 Tbs Salt

Coat at least Two Racks of  Ribs with Dry Rub mix.
Wrap Ribs in plastic wrap and refrigerate overnight.

Place Unwrapped Ribs on Rack in oven pan.
1/4 cup Applesauce
1/4 cup Water

Mix Applesauce and water and add to pan below Ribs.

Cover with aluminum foil.

Cook at 225 degrees for 6-8 hours, or until bones turn.

Pumpkin Cake

Holiday Season is Not Required.

Combine
1/2 cup (1 stick) of soft/melted butter
1 1/2 cups of sugar
3 eggs
2 teaspoons vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger

Beat Well

Add
1 – 5 oz can of evaporated milk
1 – 15 oz can of pumpkin
2 cups flour

Mix Well

Bake at 350 for 60-70 minutes in a tube pan on a tray with a bit of water.

Note: No Jack-O-Lanterns were harmed during the making of this cake.

Chewy Oatmeal Cookies

You Can’t Buy Cookies Like These!

Pre-Heat oven to 375 F

3/4 cup butter
1 1/4 cup brown sugar — firmly : packed
1 egg
1/3 cup milk
1 1/2 tsp vanilla
3 cups oats (rolled, raw, quick, old fashioned – any kind, they all work)
1 cup flour
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1 cup raisins
1 cup walnuts – chopped

Lightly grease cookie sheet with butter or shortening.

Combine butter, brown sugar, egg, milk, and vanilla.
Beat with mixer on high speed to blend well.

Combine oats, flour, baking soda, salt and cinnamon; add to butter mixture and combine until just blended.

Stir in raisins and nuts.

Drop by rounded tablespoonfuls onto greased cookie sheet, 2 inches apart.

Bake for 10-13 min., or until lightly browned.
